Love the content

OK, but not great

Interesting and informative, if a tad dry. The book contains lots of general knowledge on preserving, beautiful photos, delicious sounding recipes, and food tips. I especially appreciated the notes on fruits and veggies tasting different year to year due to sugar content, etc.I cannot say I would recommend this book to newbie canners since I found it to be just a tad lax safety-wise. Many of the recipes and techniques do not conform to USDA food preservation standards. This might not be a issue for someone with years of canning experience and generations of knowledge to pull from, but it could obviously be problematic to a beginner."Use your own judgment when it comes to deciding if your preserve has deteriorated. If it smells unpleasant, then it probably won't be good to eat!"While I agree wholeheartedly with that sentiment, I also think that it is a bit too simplistic, as many dangerous bacteria and organisms do not change the look, smell, or texture of preserves. It asks the reader to use a common sense approach to cooking/preserving, which is fine only if you have experience to back it up.In conclusion, I think this book would be great for a seasoned canner, but maybe not so appropriate for a total beginner.[ARC received courtesy of Netgalley]

My biggest worry was the cavalier attitude toward safety issues. One needs to have been canning for a while to know how to address these problems. Making this book unsuitable for new canners. If you have an doubts as to whether the content is still viable, throw it away. Better safe than sorry. Use caution in your canning process as well. If you do not know the temperature required don't guess, ask someone who can give you the correct temps.If you have the experience you will enjoy this canning book. My rating is 4 stars out of 5 due to the issues listed above.
